How To Make Chicken Caterpillar Kebab

Check out this fun recipe! Kids (and adults) will be entertained
by this delicious caterpillar kebab.

 4 chicken fillets (breast or thigh), cubes
1 small apple, cubed
1 yellow bell pepper, de-seeded and cut into triangles
Marinade:
3 tbsp soy sauce
3 tbsp honey
1/2 tbsp orange juice
To decorate:
8 cherry tomatoes
16 whole cloves (for the eyes)
8 spring onions fans

You will also need 8 Barbeque sticks (skewers)

TIP: To make the spring onion fans, cut spring onions into 3 inches lengths.
Make 4 vertical slices on each. Note to keep 1 inch of it un-slice to hold the curls together.
Place in iced water until the ends curl.

Preheat oven at 180ºC / 350ºF.
Mix together the marinade ingredients in a bowl. Add the chicken and leave to marinate for at least 30 mins. While the chicken marinates soak the 8 barbeque sticks in water to stop them burning.
Thread the chicken on to the skewers, putting a cubed apple and a yellow bell pepper triangle between each piece of chicken. Arrange on a baking tray and transfer to the preheated oven. Cook for about 15 to 20  mins, basting with the marinade and turning occasionally, until cooked through.
Then time to decorate, make a face for each caterpillar using a cherry tomato (if you are worried serving raw tomato you can heat up the tomato in a hot teflon pan for just 15 secs. Toss and rotate pan to avoid burning the tomatoes), studded with whole cloves (eyes). Attach it to the tip of the skewer and thread on the spring onion tail.
